This is one of my favorite things to make with radish and leek microgreens but it really tastes great with any variety. To mix it up sometimes I like to go heavy on the lime and add a little cilantro. A bit of chili paste or fresh jalapano is lovely in there too! For extra color and crunch add some shaved carrots and purple cabbage. This is a delicious and simple base that you can get creative with!
Warm Eggs and Broth Over Microgreens
This is one of our favorite meals on a cold winter day. Here I am using a rich venison broth that I made by boiling deer bones for a couple of days. This makes for a very rich and hearty soup. Sometimes if I am using a thinner stock like store bought vegetable or chicken broth, I will add a little collagen powder. Any stock will work including instant bullion though I would reduce the Braggs or Soy Sauce by half if using instant bullion.
